Easy Healthy Baked Egg Muffins Frittata Eats


I know I called this a frittata, but as defined by About’s Culinary Arts glossary:

Definition: In the culinary arts, a Frittata is a flat Italian-style omelet that’s usually prepared in a cast-iron skillet. A brunch menu classic, the frittata may also have its origin in Spanish cuisine.

it’s not a frittata.  But, when I look for this type of recipe, I use that search term.

Anywho, I wanted to make something that I can easily bring to work and is the right portion size for my calorie counting future.  Yes, I am a bandwagon “eat healthy. exercise more” new year’s resolution promiser.

So, here’s what I’ve come up with the vegetables I had on hand:

  • 1 slice of real baked ham (left over from new year’s family dinner), chopped
  • 1 large onion, chopped
  • 1/2 yellow pepper, chopped
  • 1/2 red pepper, chopped
  • 2 garlic cloves, minced
  • 3-5 slices of bread, cubed
  • 4 eggs
  • 1/2 cup egg whites
  • 1/2 cup milk
  • 1/3 cup shredded cheese
  • 1 green onion, chopped
  • salt and pepper
  • Tabasco sauce

1.  heat oven to 350 Celsius
2.  heat oil in pan, add onions, sauté until translucent
3.  add garlic
4.  add peppers until a little soft
5.  add ham
6.  take all out and put into a bowl to cool
7.  oil the muffin tins

Found this great sprayer from Costco.  Add your own oil.  pump in air.  spray!

8.  add a few pieces of cubed bread to the muffin tins

9.  when the meat mixture has cooled, add eggs, egg whites, cheese, green onion, salt and pepper.  mix

10.  ladle egg and meat mixture into muffin tins till half way full

11.  bake for 20-25 minutes

notes:

1. use whatever type of bread you want, i.e. whole grain, or use quinoa

2. wish I had some spinach, kale, zucchini, or broccoli on hand to add
